Ingredients For Dum Aloo Biryani With Aloo Tikka Recipe

Methods
  • 1. Wash and soak the rice in enough water for 20 minutes. Then bring 4 cups of water to a rolling boil. Discard the soaking water from rice. Add salt and whole spices, then add soaked rice. Cook for 5 minutes, then turn off the stove and strain the rice and discard the whole spices.
  • 2. Heat 3 tbsp of oil on medium heat and fry potatoes till golden brown and 80% cooked. Remove it to a plate. In the same pan add 2 tbsp of oil and add whole spices and saute for a few seconds. Add ginger-garlic green chillies paste. Add salt to taste and spices powder mix well.
  • 3. Add whisked curd and 1/4 cup of water and mix it. Cook for 1 minutes. Spread the fried potatoes half of the fried onions, saffron milk ,Cashews and chopped mint, coriander leaves. Next layer the cooked rice and sprinkle 1 tsp biryani masala.
  • 4. Over the rice, spread rest of the fried onions, mint and coriander leaves. Lower the heat to lowest possible, cover the pan with aluminium foil and put the lid on. Put some weight on the lid for dum cooking. Cook for 15 minutes.
  • 5. For Aloo tikka:Take Thick curd in a mixing bowl.Add spices, salt and gram flour and mix well. Now add the potatoes in the curd marination. Mix very well. Cover and allow to marinate for 30 minutes or for a couple of hours.
  • 6. Thread the potatoes on a skewer.Heat oil in pan and place them in the hot oil.Fry till the potatoes become crisp and the marination masala coating the potatoes, has also become crisp and golden.
  • 7. Serve the tandoori aloo tikka and dum aloo biryani with mint raita accompanied with onion,tomatoes and lemon slices.
