Tempura is a Japanese dish which is full of light flavours.Top it with fried frozen egg and its amazing to taste.The goey yolk ozzing out of the fried covering is an icing on the cake. Do try .

Wash and keep 2 eggs in freezer for about 12 hours to freeze .This step helps to get a set egg for deep frying with goey yolk.

When preparing tempura, separate broccoli and cauliflower into medium-sized florets.Trim, stem, and cut the vegetables into uniform 2-inch pieces for even frying.

Whisk together the flour, potato starch,salt and baking soda in a small mixing bowl.

Beat the third egg and cold water together in a large mixing bowl, then gradually add in the flour mixture 1/3 cup at a time until just combined. Do not overmix ; leave a few lumps in the batter.

Heat oil .

Dip the vegetables into the batter, allowing most of the batter to drip off back into the bowl. Then drop them carefully into the oil in small batches.

Fry until crisp and golden brown. Remove the vegetables from the oil and drain on paper towels.

Now take out eggs from the freezer,peel .

Dip them in the batter one by one and deep fry. Drain on paper towels.
10.
When about to serve , mix soya sauce and salt in rice .
11.
Spread in two bowls and top them with fried egg and vegetables.Your egg tempura is ready.
