Lau Shak Torkari ( Bottle Gourd Leaves with Stem Curry)

This recipe is nothing but a traditional Bengali mishmash with Bottle Gourd greens. It includes tender bottle gourd leaves and stem which is made into healthy and tasty mishmash. However this particular recipe has my mom's magic as the it's her won creation adding garlic and black cumin seeds paste. This has lot of health benefits along with amazing flavours and taste.

Ingredients For Lau Shak Torkari ( Bottle Gourd Leaves with Stem Curry)

Methods
  • 1. First cut all the vegetables in big dices. Cut the bottle gourd stem in more or less big pieces. Wash the everything after cutting it.
  • 2. Meanwhile fry the homemade boris well. Take it out once done into a plate.
  • 3. Now in the same kadai add little of black cumin seeds. Add 3-4 crushed garlic cloves. Let it splutter.
  • 4. Then add all the vegetables into the kadai. Add a little salt and 1/4tsp of turmeric powder.
  • 5. Stir everything and let it cook on low flame for 2-3mintues. Then add the bottle gourd leaves and stem and add salt.
  • 6. Now stir everything very well on low flame for more 3-4mintues.
  • 7. At thia stage add the green chillies slightly slitting it. Now splash little water and give one stir.
  • 8. Now put a lid and let it slow cooking on low flame untill it gets mushy for about 10-12mintues. Make sure to stir in between
  • 9. Once it gets mushy add sugar and give one stir. Now add 2 cups of water and let it boil on highflamefor 2-3mintues. Stir it between.
  • 10. Now put the lid again and low the flame and let it cook for more 2minutes
  • 11. Meanwhile make a paste of 3/4tbsp of black cumin seeds + 5-6 garlic cloves. Make sure to make this paste in a sheel batta
  • 12. Now put off the lid. Add this paste adding little water to the entire mishmash. Let it cook for one more minute.
  • 13. Check the seasoning. If required add it as per taste.
  • 14. Enjoy this bottle ground greens mishmash with rice.
