How to make Malpua rabri pizza with gulabjamun topping recipe

Firstly, in a heavy bottom vessel, heat milk and let it boil stirring occasionally. Once a layer of milk cream is formed, gather and stick it to sides of vessel.

Again, keep boiling the milk and repeat the process of gathering cream to the dudes of the vessel till the milk reduces to one third its quantity.

Next, add milkmaid, cardamom powder and mix well. Now scrape the gathered cream from the sides and mix with the rabri. Transfer to a bowl and let cool down. Rabri is ready.

Now, to prepare the malpua, mix together flour, suji, sugar and make a batter of medium consistency using water/milk as preferred. Rest the batter for 15 minutes.

For deep frying, pour ghee in a wide pan. When hot, pour the entire batter to make one big malpua. Fry both sides till golden brown. Strain excess ghee. Let cool down completely.

When all the elements are in room temperature, spread rabri over the malpua just like we spread pizza sauce on a pizza base. Spread chopped gulab jamun as a topping. Garnish with chopped pistachios and almond. Chill before serving. Malpua rabri pizza with gulabjamun topping is ready to serve.
