Recipe Notes

In place of vermicelli,you can use very thin sewian also that are used for kheer.Then the amount of water will be just two three tbsp.I use silicon moulds as they are easy to demould.You can use cling foil in any mould or small bowls .

Ingredients For Mango Basket Delight Recipe

Methods
  • 1. Boil milk in a thick bottomed broad pan.Lower the flame and let it simmer till it reduces to half.
  • 2. Meanwhile,puree a ripe sweet mango in grinder.Keep aside.
  • 3. Take another thick bottomed pan and dry roast sewian on low flame till light brown.
  • 4. Add desi ghee and again roast for about two three minutes.
  • 5. Add water and cook while stirring continuously.
  • 6. When water dries up,add three tbsp condensed milk and keep stirring.
  • 7. When it dries up,immediately transfer these in moulds.Do not let sewian cool as they become dry and hard to mould.
  • 8. Press towards the walls and base of the moulds so that the sewian takes the shape of the mould.
  • 9. Keep these moulds in fridge for 3-4 hours to set.
  • 10. Now coming back to the rabri,add condensed milk and dairy whitener to it.Keep stirring and scraping the sides to collect the dry residue on the sides of the pan.
  • 11. Once it thickens,add mango puree and cardamom powder and keep stirring on medium flame. After adding mango,the rabri will start looking somewhat grainy in texture.
  • 12. When it reaches thick sauce like consistency,check for sweetness.You may add 1 tbsp sugar if required.
  • 13. Cook for few minutes and turn off the flame.Let it cool.
  • 14. When serving,take out the moulds and demould them gently.The sewian baskets are ready.
  • 15. Fill these baskets with the mango rabri.Garnish with pistachio slivers and halved cherries,mint leaves and serve immediately.
