Recipe Notes

Sugar quantity depends on taste.Mango must be full riped and no threads will be th ere in the pulp. To ignore the threads from pulp, mixer jar can be used for making the pulp.

Ingredients For Mango Sandesh Paturi Recipe

Methods
  • 1. Boil the milk, add lemon juice into it and make chena.
  • 2. Rinse the chena and wash it 3 more times to avoid sour taste.
  • 3. Take a cotton cloth piece and put the chena into this. Hang this for next 3hrs. All the excess water will come out from chena.
  • 4. Take the paneer type chena and mix it with sugar, mango pulp, cardamom powder.
  • 5. Mix it properly to avoid any lump.
  • 6. Take banana leaf and dry roast it for 10secs both side. This process is to avoid the breaking of leaf while binding .
  • 7. Take leaf, brush with ghee and put some amount of mango-chena mixture. Fold the leaf and cover the mixture properly.
  • 8. Make sure the mixture will not come out while cooking. Tie it from 4sides with threads. Follow the same process for another 3.
  • 9. Take a nonstick pan on oven, brush it with ghee. Put the mixture filled leaves one by one and cover ot on low flame.
  • 10. After 7-8min,flip the sides and cover it again.
  • 11. After another 7-8min, turn off the gas and let it cool.
  • 12. Serve it as a dessert, and enjoy it taking out from the leaf. Or serve it after taking out the mango pandesh paturi from leaf.
