Wash, peel and cut the potatoes and parwal. Heat oil in a pan and fry the potatoes and parwal on medium heat.

Leave two to three spoons of oil in the pan, remove the rest of the oil separately. Now add cumin seeds to it. When cumin turns brown, add green chili, onion, ginger garlic paste and fry it well.

When the onion is fried, add tomatoes, salt and turmeric to it. Cook till the tomatoes are also cooked. When the masala is roasted well, then add fried potatoes and parwal to it, along with all the dry spices and stir it well.

Switch off the gas and add lemon juice. Take out in a serving plate and garnish with green coriander. This vegetable tastes very delicious with dal, rice and poori.
