PUNJABI PINNI RECIPE

It is my grand mother’s recipe, very close to my heart even all punjabis. Pinni is a Punjabi sweet that is eaten mostly in winters. It is made from desi ghee, wheat flour, jaggery / sugar and lots of dry fruits .

Recipe Notes

Adjust the amount of sugar as per your taste. You can also use jaggery in place of sugar. Flour should be properly roasted.

Methods
  • 1. Heat 4 tbsp ghee in a wok . Add Gond in it . Fry it on low heat till it becomes puffy and crunchy. Stir continuously.
  • 2. Remove it in a plate. In same ghee fry all the nuts one by one on low heat. Keep aside to cool down.
  • 3. In a mixer jar add all the fried nuts. Make coarse mixture.
  • 4. Now add 1 cup ghee in the same wok. Add wheat flour and besan , roast it on low heat for 5-6 minutes.
  • 5. Now add rawa. Mix it well. Stir continuously. Roast the mixture on low heat till it becomes light brown and start releasing ghee. It will take 20-25 minutes.
  • 6. Turn off the flame. Stir it continuously.
  • 7. Take a large mixing bowl add roasted flour. Allow it to cool.
  • 8. Add in grinded dry fruits, cardamom powder and powdered sugar. Mix all very well. If required add some hot ghee in it.
  • 9. Take some mixture in hand. Press it and make round shaped Pinni.
  • 10. Garnish it with cashew. Keep it in air tight container.
