Puri bhaji ( Gujarati style potato curry) Recipe

This is a traditional and popular Gujarati curry recipe made with potatoes in tamarind and jaggery based gravy. In Gujarati it is known as ' rasawala bataka nu Shak ' Bataka means potato and Shak means curry. It can be served with puri, thepla, roti or even Khichdi. It is flavourful, easy to make and liked by all age groups.

Recipe Notes

You can use amchur powder instead of tamarind pulp. If you don't like skin of potatoes you can use peeled potatoes

Methods
  • 1. Wash potatoes and cut into cubes. Don't peel skin.
  • 2. In a pan heat oil. Add mustard seeds and cumin seeds
  • 3. Add fenugreek seeds, dry red chillies and bay leaf..
  • 4. When mustard seeds crackles add asafoetida and curry leaves.
  • 5. Now add approximate 2 cups water and let it to boil.
  • 6. When it comes to boil add cubed potatoes. Add salt and turmeric powder.
  • 7. Cover with lid and cook until potatoes tenders well. Stir in between.
  • 8. When potatoes are cooked well, add red chili powder dhania Jeera powder and garam masala powder.
  • 9. Add tamarind pulp and jaggery. Mix well.
  • 10. Add some water if needed. Cover with lid and simmer for 2-3 minutes.
  • 11. Garnish with chopped coriander leaves.
  • 12. Delicious potato bhaji is ready to serve. Serve with puris.
  • 13. For Puri, knead dough with wheat flour, salt, oil and enough water.
  • 14. Dough should be not so hard not so soft.
  • 15. Prepare equal size small balls from it.
  • 16. Roll out all puris and deep fry in hot oil.
