Rajasthani Rotla Thaali Recipe

Following is the recipe for Rajasthani rotla loaded with pure ghee,kadhi and mouth-watering Garlic-curd chutney which one of the favorite delicacies. This thaali comprises of 11 items dedicated to the 11 players of the powerful Rajasthani Royal team of the IPL. A symbolic gesture through RR for our favorite team.

Ingredients For Rajasthani Rotla Thaali Recipe

Methods
  • 1. For rotla -Prepare an extremely tight dough of aata ,oil 5 -6 tbspn,salt,water. Keep for 10-15 minutes. Pin roll it into a thick base (approx 1 cm height).
  • 2. Heat a tawa and grease the complete tawa with ghee on low flame. Then place the thick base on tawa and stab with a fork in uniform gaps. Flip it upside down after 2 minutes. Then press gently with a cloth .Now pinch the corners of rotla with your fingers.
  • 3. Cook it well till it's bottom becomes golden brown and crusty. Once crispy, flip it again carefully. Cook on low-med flame for 5-10 minutes. Serve with hot pure ghee applied.
  • 4. For kadhi - Take a large bowl, add 1/2 cup besan and 1.5 cups curd. Whisk until besan and yogurt are well combined. Add 1/2 teaspoon red chili powder, 1/2 teaspoon turmeric powder and 1 teaspoon coriander powder and whisk until you have a lump free mixture. Add 6 cups water and set aside.
  • 5. In a large and deep pan, add 2 tbspns of oil on medium-high heat. Once the oil is hot , add methi seeds and jeera. Let them splutter and then add hing.
  • 6. Also add 10-15 curry leaves and 4-5 pcs big of green chilli. Add the prepared besan-yogurt mixture into the pan. Now with heat on medium-high, stir continuously until the kadhi comes to a boil.
  • 7. Then lower the heat to low-medium and let it cook for around 15-20 minutes. Keep stirring it in between. Add salt after the kadhi has been cooking for 15 minutes or so. Garnish with chopped coriander.
  • 8. For special Garlic-curd chutney - Peel and grind 15-20 pcs of garlic. Take 2-3 tbspns of whisked curd in a fresh bowl and add 1 tbspn red chilli powder, 1 teaspn coriander powder and salt to taste. Heat a small pan add 1 tbspn oil, add mustard seeds, cumin seeds, and the grinded garlic.
  • 9. Cook on low Flame till 1 minutes. Add the curd paste in it and keep mixing till oil evaporates (it will take app 3-5 minutes ).
  • 10. Your chatpati garlic curd chutney is ready. Serve the entire thaali with , potato bhaji , fried green chillies, onions ,lemon pickle, kokam curry and chilled buttermilk.
