Thandai Soufflé Recipe

Holi is incomplete without Thandai. Thandai is a cold drink prepared in India for Holi. And Soufflé is a dessert item which was originated in early 18th Century in France. Here, I have tried to combine both to get a fusion recipe for Holi.

Ingredients For Thandai Soufflé Recipe

Methods
  • 1. Soak almonds, cashewnuts, pistachios, fennel seeds, poppy seeds, black peppercorns, green cardamom pods, melon seeds, raisins and rose water for 5 hours.
  • 2. In a lukewarm milk soak saffron strands for 20 minutes.
  • 3. Blend ingredients for thandai paste and saffron milk to prepare a paste.
  • 4. Add honey into milk and boil.
  • 5. Add thandai paste into this mixing and boil for 1 minute in low heat. After 1 minute switch off the gas and let it cool.
  • 6. Whisk cream in a separate bowl.
  • 7. Add cream when thandai mix is cool.
  • 8. Now pour this in soufflé cup and refrigerate for few hours. After few hours take out and garnish with pistachios.
  • 9. Now pour this in soufflé cup and refrigerate for few hours.
  • 10. After few hours take out and garnish with pistachios and enjoy Holi with Thandai Soufflé.
