Methods
  • 1. 1. Start by taking chilled non-dairy whipping cream in a bowl and whip it until stiff peaks form. Place it in the refrigerator until needed.2. Soak the cashews and pistachios separately in hot water for 15-20 minutes.
  • 2. 3. Meanwhile, chop the carrot into small pieces, add 1 tablespoon of water, and microwave it for 1-2 minutes. Allow it to cool completely.4. Make separate pastes of the cashews, pistachios, and carrots, transferring each to its own bowl. Add a little water while blending if necessary.
  • 3. 5. Divide the whipped cream equally among the three bowls.6. In the bowl with the pistachio paste, add green food coloring and pistachio essence.
  • 4. 7. In the bowl with the carrot paste, add orange food coloring and essence.8. Add rabri essence to the bowl with the cashew paste.
  • 5. 9. Mix each bowl thoroughly.10. Transfer each mixture into its own piping bag and set them aside.
  • 6. 11. Take two small cups and begin by adding a layer of the pistachio-flavored mixture, gently tapping it to spread evenly. Follow with a layer of the cashew mixture, tap again, and finish with the orange-flavored mixture, tapping to set all the layers nicely.
  • 7. 12. Repeat the process in the second cup.13. Cover the cups with silver foil and refrigerate for at least 4-5 hours, or ideally overnight.
  • 8. 14. Garnish with some chopped nuts and enjoy this delicious tricolor mousse!
