In a bowl, mix dry active yeast, pinch of salt, sugar with lukewarm milk. Cover it and keep rest for 10minutes.

In another bowl, take maida ,1pkt maggi masala e magic and salt. Add active yeast mixture & make a very soft dough of it. Add butter in it, cover it and keep rest for an hour.

For Vada, take boiled and mashed potatoes in a bowl. Add salt, chopped 3tbspn coriander leaves, turmeric powder, 1pkt maggi masala e magic ,garam masala & 1tspn lemon juice.

In a tadka pan, heat 1tspn oil. Add musterd seeds, cumin seeds, chana dal, urad dal, hing & curry leaves. Fry for few seconds and then add it to the potato mixture. Mix it well.

Now make small vadas. Deep fry the vadas in medium to high flame.

Now time to make Bao bun. The bun dough will be double in size now. Just punch the dough to remove the air bubbles in it. Knead it again & then roll it with the help of roller pin.

Make small thick rounds from it. Brush butter inside all the rounds and fold it. Keep all the folded rounds on butter paper. Heat water in a steamer and steam the bao bun for 15minutes until puffed up.Once it's done take out from steamer.

In a mixing jar, take chopped coriander, green chilli, ginger, salt, 1tspn sugar and cumin powder.Blend it well.

Add maggi coconut milk in half cup of hot water and mix it well. Add coriander mixture in the coconut milk and blend it well again.Green chutney is ready now.

Now open each bun, apply some green chutney and dry red chutney inside it. Put two vadas inside it & apply some more green and red chutney for extra spice. Serve it with fried green chilli.
