Poha is very easy, quick and famous breakfast recipe from northern India. Today I loaded the regular Poha with loads of veggies and made it very healthy.
1.
Wash and soak rice flakes for 5 minutes. Strain well and mix all the spices and mix well.

Finely chopped veggies like onion, capsicum,potato, tomato, carrot and peas. Take a wok add oil and heat it. Add mustard seeds and cumin seeds, let them crackle. Fry all the veggies till they get tender.

Add tomatoes once all veggies cooked, now cook until veggies starts to leave oil. Add rice flakes and mix it well. Serve hot with dash of lemon with cup of tea. Seasonal veggies makes them healthier to eat.
