Recipe Notes

If you don't have chinese cooking wine you can use vinegar instead (half the portion). If you don't have oyster sauce or sesame oil you can make without it as well. This dish can be served with noodles, sticky rice, jasmine rice or plain rice as well.

  • 1. First lets start with Tenderising the chicken. Cut the chicken into small thick strips and sprinkle the baking soda over it. Mix it well and leave it covered for 15 min to marinate.
  • 2. After 15 min wash off the chicken thoroughly with fresh water to make sure the baking soda is rinsed off the chicken thoroughly. Now take a kitchen towel and pat dry the chicken pcs. This process will help in making the chicken pcs super tender when cooked in the sauce and pat drying the chicken will prevent the chicken from sweating in the pan while being cooked.
  • 3. Lets make the sauce before we cook the chicken.
  • 4. For the sauce : Take the cornflour and add it to 1 cup water. Make sure the water you use is cold or chilled to prevent the cornflour turning into lumps.
  • 5. Add the Chinese cooking wine or Shaohsing rice cooking wine, light and dark soya sauce, oyster sauce, sesame oil, white pepper and sugar and stir well.
  • 6. Now for the stir fry : Take oil in a pan on high flame and heat it well. We will first add the green onions to the hot oil. Remove the roots of the green onions. We will not use the green stalks instead only the white onion part is what we need. So chop the onions into thick 2 inch pcs length wise and add in the pan. Be careful as the onions can spit in the hot oil.
  • 7. Stir fry for 30-40 seconds so the oil takes the flavour from the onions and then add the chicken to the pan and stir constantly to cook for 2-3 minutes.
  • 8. Now add the thick sliced mushrooms and stir fry for another 2-3 minutes, while stirring also add the garlic.
  • 9. Now is the time to add the sauce, but make sure you stir the prepared sauce mix once really well before adding it to the pan.
  • 10. The minute you add the sauce to the pan, it will thicken quickly because of cornflour. So make sure you stir well for it to coat the chicken and mushrooms.
  • 11. The dish is ready to serve. Garnish with some chopped green stalks of the onions and some sesame seeds. Serve immediately.
