Ingredients For Chanar Polau or Chena Pulao Recipe

Methods
  • 1. Take rice wash 2-3 times and soak for half an hour.Take a pan and add 1/2 tbsp ghee on medium flame.Add 1/ 2 cup chhena ,salt to taste,1/2 tbsp sugar, now sautĂ© for 2-3 minutes .Now take it out of the pan and set aside.
  • 2. Now add 1 tbsp all purpose flour with remaining 1/2 cup chena. Mix well. Now add salt according to taste sugar and dry roasted masala powder. Mix well and Knead it for 2 -3 minutand make a soft and smooth dough .
  • 3. Now apply ghee ghee on palm, take small portion of dough and make small balls. Now heat a pan add 2 tbsp ghee on medium flame, add the chena balls and fry until golden brown. Now take them out and keep aside.
  • 4. Now drain the water from the rice and dry the rice for 10 minutes. Now take the rice, add 1/2 tbsp garam masala powder (green cardamom , black cardamom, cinnamon, cloves , nutmeg,mace), finely chopped ginger,salt,turmeric,raisins and mix them well.
  • 5. Now heat a pan on medium flame, add remaining ghee. Add whole garam masala, bay leaves, black pepper bits and sautĂ© for 30 seconds. Now add the marinated rice and sautĂ© for 2-3 minutes on low to medium flame. Now add 4 cups of hot water and cover with a lid and cook for 10minutes on low to medium heat
  • 6. After 10 minutes add finely chopped almond,green chillies, fried chhena(not chena balls) and sugar.Mix gently and cover with the lid.
  • 7. Now mix the saffron with warm milk. After 5 minutes, add fried chena balls and saffron milk. Mix gently. Cover with the lid and cook for 3- 4 minutes on medium flame.After 3 minutes turn off the heat and keep aside for 30 minutes it’s ready to serve.
