Lau Bori Ghanta ( Bottle Gourd with dried lentil dumplings)

Lau Bori Ghanta is a very famous traditional Bengali vegetarian delicay where bottle gourd/lau/lauki is slow cooked with minimal spices to no spices along with bori or sun dried lentil dumplings in its own juices/ fluids. Its a healthy, yet amazingly delicious in taste. This particular recipe of my mom's has 2 added ingredients that is milk and fresh coriander leaves which adds more freshness and juiciness to this dish

Recipe Notes

Make sure that you peel off the skin of bottle gourd and do not wash after shredding the bottle gourd. It turns out to be bitter.

Ingredients For Lau Bori Ghanta ( Bottle Gourd with dried lentil dumplings)

Methods
  • 1. Wash properly. Peel off the skin and cut the bottle gourd into thick shredder pieces and set aside
  • 2. Meanwhile fry the boris (dried lentil dumplings) well.
  • 3. Now take a heavy bottom kadai. Add mustard oil. Let it heat up. Add bay leaf, cumin seeds, dry deseeded red chilli into the kadai. Let it crackle.i
  • 4. Now add the shredded bottle gourd and 1 whole green chilli into the kadai. Make sure the flame is on low. Add pinch of salt and stir for about 2mintues. Put on a lid and let it slowly cook for 10 minutes on low flame.
  • 5. Now put off the lid and stir for a while on low flame. Again put on the lid and let it slow cook on low flame till it becomes mushy and cooked.
  • 6. Once the bottle gourd is cooked add sugar , a pinch of tumeric and 1/2 cup milk. Cook continuously while adding. milk.
  • 7. Finish off with freshly chopped coriander. Serve it with hot steaming rice.
