Dudh shukto

Shukto is a famous Bengali mix vegetable delicacy served with rice which is said to have a Portuguese influence. Its also said that shukto which has bitter gourd has ayurvedic properties as well. This particular recipe is of my mother which has an added twist that is the addition of Milk in it.

Ingredients For Dudh shukto

Methods
  • 1. Cut each of the vegetables in different shapes in a mediummedium-large sizes
  • 2. Make a paste of black mustard seeds + poppy seeds +ginger with salt. Its preferable to paste using sheel nora but you can use mixer grinder.
  • 3. Now take a heavy bottom aluminum kadai. Add 2 tbsp mustard oil. Let it smoke up.
  • 4. Now add the bay leaf and panch program. Let it crackle.
  • 5. Add all the pre cut vegetables into the kadai. Add a little salt and stir for 3-4minutes on low-medium flame.
  • 6. Then add water. And put a lid on the kadai. Let the vegetables simmer on low flame till each vegetables boiled. Make sure to check and stir in intervals so see whether the vegetables are boiled.
  • 7. Meanwhile mix the mustard+ poppy + ginger paste in 1/2cup milk
  • 8. Now add the already fried homemade daal bori into vegetables once its boiled. Now add sugar and stir agai. Let the sugar melt.
  • 9. Add the paste+ milk mixture into the vegetables once its almost done. Now check the seasonings stir a while and put the flame off.
  • 10. Finish off with Ghee. Serve at normal temperature with hot steaming rice.
