Lime ice Pops Recipe

It is midsummer and we all want something chilled and cold, I made these healthy Lime Ice Pops which are creamy and satiny smooth. My grandsons LOVE frosty treats, and I love to spoil them with homemade popsicles with homemade flavours. Plus, making my own popsicles means I know what goes into them. Popsicles are so delicious and easy to make! Try them! Lime Pops If you like citrusy flavours, then you have to try these; refreshing, sweet and ever so slightly tangy. They are perfect for that” Choti wali bhookh” that kids have or the midnight snack that adults crave. I love anything lemony and I still indulge in Popsicles as they are absolutely refreshing and less heavy than most other treats. I wanted to make healthy popsicles while saving on calories so, I substituted the heavy cream cheese for homemade Greek yoghurt and they turned out perfect. The lime zest is the secret ingredient which packs a punch. The lemony flavour just tickles your taste buds. What is an ice-pop? An ice pop is water or milk-based quintessentially frozen treat on a stick. The best part is you don’t need fancy ice pop moulds to make these. I used paper teacups but you can use any small containers or freeze in ice cube trays or any empty yoghurt containers.

Recipe Notes

You can use cream cheese instead of Greek Yoghurt Any kind of crackers will do. See that the Cream is cold. Whisk with the hand or with a blender. Don't overdo the lemon zest.

Methods
  • 1. Crush the Marie biscuits to form fine crumbs. Add the butter and crumble with fingers till smooth. Now, crush the Oreos after removing the cream layer and add the melted butter.
  • 2. Grate the lemon for the zest and squeeze out the juice. In the bowl beat the Greek yoghurt with a hand whisk on low speed until smooth.
  • 3. Add the lemon zest and juice along with the sweetened condensed milk, and whisk till smooth. You can add castor sugar if you are adding less condensed milk.
  • 4. Finally, add the cream, whisk until mixture is thick. Spoon into the cups and push an ice cream stick in the middle.
  • 5. Freeze for 30 minutes and top with the biscuit and oreo crumble and lightly press down to flatten. Freeze until firm, at least 6 hours or overnight.
  • 6. When ready to serve, peel the cups away from the pops. Your rich, sweet, creamy, delectable and tangy frozen Lime Ice Pops with Greek Yoghurt & Oreos are ready to be gobbled up. Believe me, they vanish in minutes.
