Methods
  • 1. Firstly, wash the mutton properly and drain excess water. In a large mixing bowl,add the mutton, 1/2 cup curd, 1 tablespoon ginger garlic paste, salt, 1/2 teaspoon turmeric powder, a little mustard oil.Marinate the mutton very well.Cover and refrigerate for 1 hour. If possible marinate overnight
  • 2. Now, before cooking, keep the mutton out of the refrigerator and bring to room temperature. Heat mustard oil over medium heat in a heavy bottom skillet. When hot, add whole spices,dry red chilies, bay leaves, and fry for 4-5 seconds. Add onions and fry until they turn golden brown.
  • 3. Next, add ginger garlic paste, and saute till the raw smell is gone. Add the marinated mutton together with the marinade and potatoes and saute for 5 minutes on high heat. Add the dry spices, curd and cook for another 5 minutes. Now reduce the flame to lowest and keep cooking.
  • 4. Add a splash of water (50 ml) and keep cooking till the meat is tender. Keep adding splashes of water if the masala tends to stick at the bottom. The mutton will take around 1.5-2 hours to get tender. If your potatoes tend to cook fast, add them halfway while cooking the mutton.
  • 5. Finally, add garam masala powder, slit green chillies, ghee and mix well. Cover and cook for 5 minutes. Give it a standing time of about 10 minutes . Then it's ready to serve
