UNDHIYU RECIPE

Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of surat, Gujarat, India. The name of this dish comes from the Gujarati word “undhu “ which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed “ maltu “ which are fired from above.

Ingredients For UNDHIYU RECIPE

Methods
  • 1. Mixed everything and make dough and make, a muthiya oval shaped or round shapeand fry them properly.
  • 2. Take a baby potatoes and peel them and make a two halves fry till golden brown
  • 3. Take a sweet potato peel them and cut into rounders and fry them till golden. Now take a ratalu ( purple yum) make big cubes and fry till golden , Take a papdi, carrot, tuvar Dana , green peas remove stem and peel separate into and pressure cooker 1-2 whistle
  • 4. Now take a pan add oil. Add hing , whole red chili sautĂ© it add garlic green chili paste and mixed it. Add chopped tomatoes and sautĂ© it. Add red chili powder, turmeric powder, salt, coriander powder, garam masala, sugar , lemon juice, sweet chutney and mixed it and sautĂ© it till oil comes up.
  • 5. Now add all all vegetables and mixed it add pressure cooker vegetable and mixed sautĂ© 2 minutes
  • 6. Add Methi muthiya mixed it.
  • 7. And cook it 5-7 minutes on medium flame.
  • 8. Served it with puri.
