URLAI ROAST/BABY POTATO ROAST RECIPE

Urlai roast or baby potato roast is a hearty South Indian preparation. This particular recipe is one of my personal favourites . It's my take/version of the recipe. What makes it even better is that it can be had with dosa, roti or rice plus potatoes are a staple in almost all the houses. Do not grind the shallots and onion to a very fine paste keep it a little coarse.

Ingredients For URLAI ROAST/BABY POTATO ROAST RECIPE

Methods
  • 1. Boil potatoes skin on and cut into halves. If big cut into quarters.
  • 2. To a pan add 1 tbsp of sesame oil and 1 tbsp of vegetable oil. Once it heats up add shallots and garlic cloves and fry until translucent.
  • 3. Once it turns golden brown transfer to a jar and grind until little coarse.
  • 4. Dry roast coriander seeds, dry red chillies, fenugreek seeds, cumin seeds and peppercorns until aromatic. Grind to a powder.
  • 5. To the same pan add the rest of the oils and heat. Add the boiled potatoes and fry until golden.
  • 6. To the pan add the coarse paste and further cook for 8~10 minutes.
  • 7. Add the dry roast powder and season with salt.
  • 8. Finally garnish with chopped coriander and serve hot.
