Boil tur dal, bottle gourd, pumpkin, capsicum, water in a pressure cooker and mash with a masher.

Prepare tomato, green chili paste. Heat oil, add asafoetida, fennel, dry red chili, coriander powder, turmeric powder, red chili powder and add tomato paste and fry, mix vegetables, garam masala, sambar masala, black salt, salt and add water as needed. Sambar is ready.

Soak urad dal in water for 4-5 hours. Prepare a paste of urad dal, green chillies and ginger. Add red chili, cumin, salt and green coriander and prepare the batter by whipping the paste.

Heat the oil and prepare the vadas with the vada maker, fry the vadas till golden and crisp. Garnish the hot sambar vadas with coriander leaves/onion and serve with coconut chutney/green chutney/peanut chutney.
